I don’t know about you all but for some reason New Year’s Day always calls for a big pot of something to me. My grandma used to insist that every new year had to start off with a big bowl of black eyed peas and they were always tasty. For me, I like stews and beans and soups and . . . chili! Heck, I pretty much like anything easy that I can put on early and it basically serves itself. This chili fills the bill perfectly. Mom made it for her recent pre-Christmas party and the whole table enjoyed it. And just check out the recipe — super easy. Which actually makes sense since this is one of Sandra Lee’s Semi Homemade specialties. Plan now so you’ll have the few ingredients you need on hand and can throw it together stress free.
Sandra Lee’s (and mom’s!) Chunky Chili
2 T butter
1 onion medium sweet onion, minced
1 1/2 lbs ground beef
2 cans red kidney beans, drained
1 26-oz jar marinara sauce
1 pkg chili Schillings chili seasoning
Shredded cheese for garnish
Sour cream for garnish
Minced onion for garnish
In a large skillet over medium heat melt butter and add in onions till soft. Add in ground beef and brown. Stir in beans, marinara sauce and chili seasoning. Reduce heat and simmer for at least 15 minutes. All day on low in a crock pot works too. Ladle into bowls and garnish with cheese, sour cream and onions to taste.
Super easy and tastes like it took hours to make! The marinara sauce gives it a nice taste and is a great shortcut.
