We had a Halloween potluck today at work and my dishes were a hit. My usual response to a planned potluck is to pick up something at the grocery store on the way into work that morning but last night I was feeling ambitious and knocked out jello brains (so slimy!); calico beans (aka “gory guts”) and scrummy, ultra delicious pumpkin bars. They were so good in fact that I’m passing along the recipe here for you all to enjoy as well. Make these! They are super easy. Plus people ate them up and praised me up one side and the other — and that is a rare thing indeed when it comes to my desserts!
Yummy Pumpkin Bars
1 cup oil
2 cups sugar
2 cups pumpkin
4 eggs
2 tsp cinnamon
1/2 tsp salt
1 tsp baking soda
12 tsp baking powder
2 cups flour
Mix, put in greased 9×13 cake pan. Bake at 350 for 25 minutes.
Frosting
6 ounces cream cheese
1 cube butter
1 tsp vanilla
1 cup powdered sugar (I like less so use it to taste)
splash of milk if it seems too thick
Beat together and spread on bars once cooled. Cut into squares and enjoy the praise!
